HUEVOS RANCHEROS
The breakfast to beat all breakfasts. This recipe will feed two if you want to share a sunny spot and a feed with a lover, or one if you have a hunger like a savage.
You’ll need:
olive oil
½ red onion, chopped
1 clove of garlic, diced
1 large tomato, diced
50ml HDC Chipotle or De Arbol
1 can black beans, drained and well-rinsed
juice of ½ lemon
1 tsp apple cider vinegar (ACV)
100 ml water
2 Tsp of HDC BBQ seasoning
2 tortillas
2 eggs
In a pan, heat olive oil. Add onion and garlic, cook for 3 minutes. Add diced tomato, BBQ seasoning, lemon juice and AVC. Cook for a further 2 minutes. Add black beans, hot sauce and water. Bring to boil then lower to a simmer until mixture is thick.
While bean mix is thickening, place tortillas in a small skillet so they cover the base and come up the sides to form a bowl. Place skillet on stove, lightly cooking the tortillas until they become set in shape.
Once bean mixture and tortillas are ready. Add bean mix directly into the tortilla bowl while still in the skillet. With a spoon make two shallow holes and crack eggs into them. Place skillet under the grill at medium heat and allow eggs to cook to your desired consistency.
Feel free to add cheese. We have done this dish with feta mixed into the bean mix and also Parmesan grated over the top and browned under the grill.
If you’re feeling lazy this dish can also be made with baked beans. Just remove the diced tomatoes and black beans. If you choose to go down this road the HDC Savina works really well with it.
