What is life without hummus?! This recipe makes about week's supply for a couple of hummus lovers.
3 cans chickpeas, drained and rinsed well
juice of 2 lemons
2 tbs tahini
250ml olive oil
2 tbs apple cider vinegar (ACV)
½ head of garlic
1 tsp salt
1 tsp cumin
½ tsp black pepper
In a large pot of water, bring chickpeas to boil before lowering heat and simmering for twenty minutes or until well cooked but not mushy. Once cooked, drain and rinse well. Allow to cool completely, this is important. Shell all chickpeas. Time-consuming but again, important for smooth texture.
Place garlic in oven at 120°C for 30 minutes or until garlic is soft enough to squeeze out of husk.
Add all ingredients to food processor and process until you have a smooth consistency. Add more lemon, salt or olive oil if needed.
